Pears cooked in orange sauce

Ingredients
6 large firm pears
400ml orange juice
1 cup dry white wine
2 bay leaves
1 large cinnamon stick
3/4 cup honey
¼ cup sugar
250g raspberries (fresh or frozen)

Preparation:

  1. Peel the pears neatly and evenly. Ensure they have a good strong stalk
  2. Place them in a saucepan with the orange juice, wine, bay leaf, cinnamon stick, honey and sugar.
  3. Cover the pan and simmer gently for 10 minutes.
  4. Turn the pears over in their cooking liquid and boil quickly with lid removed until the liquid is reduced by half. Cover the pan and leave them to cool in their liquid.

To serve:

  • Place half a cup of the pear liquid in a wide lipped individual serving bowl.
  • Stand one pear upright in the juice. Place a green leaf near the stalk.
  • Place a scoop of icecream beside the pear in the liquid.
    Enjoy!

Tip for Stewing Fruit:
Fruit will not break up in stewing if it is put into hot syrup made by boiling one cup of sugar and two cups of water. Simmer very gently until almost done. Leave the fruit in the saucepan with the lid on and cooking will be completed as syrup and fruit cool.
