Orange-Glazed Beets

1 tbsp chopped onion
2 tbsp margarine
2 tbsp cornstarch
1 tsp grated orange peel
1 cup orange juice
1/4 cup light corn syrup
2 tbsp lemon juice
Salt & pepper to taste
4 cups cooked, sliced beets, drained

Directions

  1. In a medium skillet, saute onion in margarine until tender.
  2. Stir in cornstarch; stir in remaining ingredients except beets. Heat to boiling, stirring constantly.
  3. Boil and cook until heated through.
