Beet Salad
1
Bunch beets Thinly sliced red onion ¼ C Goat Cheese ½ C
Balsamic Vinegar 1 tsp honey Lettuce - Cut
off stems to 1 inch and leave bottom root. Leave beets whole. Wash and coat beets
with olive oil and salt and pepper. Wrap beets in tin foil and roast in 350-degree
oven for 45-50 minutes until tender.
- Let
beets cool to room temperature. Cut off top and root and wedge into bite-sized
pieces for the salad.
- Place
on washed lettuce leaves. Slice red onion paper-thin and place over beets.
- Sprinkle
crumbled goat cheese on top. Wisk vinegar and honey together and pour over salad.
- Serve
at room temperature. Enjoy!
