Balsamic-Glazed
Beets 3
(4-oz.) beets 1 Tbs olive oil 2 tsp salt 1/4 cup balsamic vinegar
2 Tbs firmly packed brown sugar- Preheat
oven to 400°F.
- Peel
the beets, coat with oil and sprinkle with salt. Wrap each individually in aluminum
foil and bake 1 hour.

Meanwhile, heat the vinegar in a small saucepan. Add sugar and stir to dissolve,
simmer 15 minutes; set aside.
- Unwrap
beets and allow to cool slightly. Slice beets into 1/4-inch thick slices. Place
in a roasting pan in a single layer. Pour vinegar on top and return to the oven
for 5 minutes.
